Can anybody lead towards a guide for installing the G.729 codec on a Trixbox CE 2.6.1 install.

Regardless of if it's Trixbox or any other flavor, Digium ships the codec with a register utility to take care of the licensing, and then just dump the codec module in your modules directory.
The instructions are pretty detailed.

Is there a simply way of working out which processor you have. I can't remember what I'm using on my server.

Also on the digium site there is only downloads for Asterisk 1.2 and 1.4. Do I just use the 1.4 codec?

What version of Asterisk are you running?

From the command line 'asterisk -r' 'exit' gets you out.

'cat proc/cpuinfo' will get you what you need on the CPU.

Asterisk is the core engine

Asterisk is the core engine bundled intro trixbox.
Your trixbox version is 2.6.1, but you are probably running asterisk 1.4.18.* or similar version.
As Scott said, you will see the asterisk version when logging into the asterisk CLI.
Use "exit" to get out when you have made note of it.
