I have TB CE 2.6 running on 950 MHz Duron machine with 256 megs of ram that I bought for $25 from a thrift store three yeears ago. It supports 10 Grandstream GXP2000's and two Aastra 480CT's, along with 2 Sipdroid softphones and 5 Zoiper softphones. It seems to handle as many calls as my 12 employees can give it, even though it has an antique 10/100Mbs ISA card.

I have a TDM400 knockoff analog card that I've never used and a backup copper Verizon line that sits idle, because for the last three years I've been 100% VOIP with Broadvoice's $29.99 business service and backup/overflow pay-as-you-go service from Voicepulse and Junction Networks that I rarely need.

I have a Dell server that I bought two and half years ago to migrate my TB installation, but it is collecting dust in the corner and probably will continue to do so until the Duron machine craps out (once a month I swear I'm going to get the Dell up and running, but I'm one of those people..).

Over time, my dial plan has gotten more and more complex - Day/Night mode, Queues, multiple IVR's, Inbound routing for my cell phones, etc. I can't imagine going back to a dinky two-line, three extension phone system like the one I replaced.

The only problem I have with my trixbox is that I forget about it. It only has a 30 Gig hard drive and the backups overwhelm it if I forget to go in and clean them out once every few months.
